Eggplant Caponata with I Bello's

Ingredients

2 eggplants
200g of I Bello's
Capers
Green olives
Garlic
Balsamic vinegar
Extra virgin olive oil
Salt and black pepper

Method

Dice the aubergines and cook them in a pan until tender.
Add the whole I Bello's, capers, green olives, garlic and balsamic vinegar.
Cook until the tomatoes soften and all the ingredients are well mixed.
