Cold Rice Salad with I Bello's and Tuna

Ingredients

150g of rice
200g of I Bello's
1 can of drained tuna
Black olives
Pickled gherkins
Extra virgin olive oil
Lemon juice
Fresh parsley
Salt and black pepper

Method

Cook the rice al dente and let it cool.
Cut the I Bello's in half and add them to the rice along with the tuna, olives and sliced gherkins.
Season with oil, lemon juice, chopped parsley, salt and pepper.

Advice

Serve the salad cold for a light summer lunch.
