Apple Muffins and I Bello's

Ingredients

150g of flour
100g sugar
1 apple
100g of I Bello's
1 egg
80ml of milk
60ml vegetable oil
1 teaspoon baking powder
1 teaspoon ground cinnamon
Powdered sugar for decoration (optional)

Method

Preheat the oven to 180°C and prepare the muffin tins with the paper liners.
In a bowl, mix the flour, sugar, baking powder and cinnamon.
In another bowl, beat the egg and add the milk and oil.
Pour the liquid ingredients into the bowl of dry ingredients and mix until smooth.
Peel and grate the apple, then add it to the mixture together with the I Bello's cut in half.
Divide the batter into the muffin tins, filling them about 3/4 full.
Bake for about 20-25 minutes or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
Once cooked, let the muffins cool before serving, sprinkling with icing sugar if necessary.

Advice

Add a handful of chopped walnuts for an added crunch.
