Panzanella with Bello's and Cucumbers

Ingredients

200g of stale bread
200g of I Bello's
1 cucumber
1 red onion
Black olives
Fresh basil
Red wine vinegar
Extra virgin olive oil
Salt and black pepper

Method

Cut the bread into cubes and leave it to soften in water.
Cut the I Bello's in half and add to the bread along with the sliced cucumber, thinly sliced onion and olives.
Season with fresh basil, vinegar, oil, salt and pepper.

Advice

Let it rest in the refrigerator for at least an hour before serving.
