Quinoa with I Bello's and Grilled Vegetables

Ingredients

100g of quinoa
200g of I Bello's
Aubergines, courgettes and peppers (quantity to taste)
Extra virgin olive oil
Balsamic vinegar
Dried oregano
Salt and black pepper

Method

Cook the quinoa according to the package instructions.
Cut the vegetables into slices and grill them.
Fry the I Bello's in a pan with oil and oregano.
Combine the grilled vegetables with the quinoa and season with balsamic vinegar, salt and pepper.

Advice

Also add cherry tomatoes for an extra touch of freshness.
